Why Buy Red Hill Farms Meat?

The Jones family takes pride in offering the best care, management, and nutrition to their cattle and hogs.   At Red Hill Farms, this means a clean, spacious, low-stress environment; a wholesome diet of locally-grown feedstuffs; and feeding no growth promotants, hormones or antibiotics.   The hogs are fed a diet consisting of locally-grown corn and soybean meal which is fortified with vitamins and minerals.   The finishing cattle are fed a diet of corn silage and corn and supplemented with vitamins and minerals.   The vitamins and minerals are specifically formulated for each stage of the animals' development.   Red Hill Farms does not feed garbage, table scraps, or other by-products which are detrimental to meat quality.   When necessary cattle or hogs are treated with antibiotics, but the instance is rare.   Treated animals are not considered for the farm fresh meat program.

The sows are farrowed in a climate-controlled building with heat and evaporative cooling to ensure maximum baby pig survival.   Growing pigs and sows are bedded with straw in the winter and have sprinklers to stay cool in the summer.   Our sows are gestated in outdoor lots to graze in the woods, and each lot has adequate shelter to protect the sows from storms and cold weather.   Fresh, clean water is always a priority for the livestock.   The pigs are weaned at approximately 4 weeks of age weighing approximately 15 pounds.   They are then fed seven different diets from 15 pounds to 300 pounds with each diet specifically designed for the pigs' nutritional requirements.   Pigs reach market size of 300 pounds at about six months of age.  

Red Hill Farms cows graze fescue, clover, and native grass pastures.   The cows and calves are supplemented during the winter with small grain and grass haylage and always have access to free choice mineral supplements and fresh water.   Calves that are selected for our beef program are fed a forage diet until approximately one year of age.   At this time, they are transitioned from a forage diet to a corn diet.   They are fed this finishing diet of corn, corn silage, and minerals for 90 to 120 days prior to harvest.

All livestock marketed through the farm fresh meat program are born and raised at Red Hill Farms.   The Jones family does not buy cattle or hogs from the livestock markets or other producers.   The Jones family is intricately involved with production from birth to your freezer.  

Red Hill Farms produces Duroc pork and Angus beef - a breed of hogs and a breed of cattle each known for their meat quality.   The National Pork Producers Council has documented the superior quality of Duroc pork.   While pork is known as 'the other white meat', a raw portion of pork that is dark pink to dark reddish pink is much more desirable.   Darker, reddish raw pork will typically be juicier, more tender, and have a higher pH which translates into superior meat quality.   The Duroc hogs at Red Hill Farms are bred to excel in these traits.   Red Angus and Angus beef is known for exceptional marbling and tenderness.   Red Hill Farms cattle breeding program has placed major emphasis on eating quality since the herds were established.   All Red Hill Farms beef carcasses are aged 14 days to ensure tenderness and flavor.

The Jones family is currently offering farm fresh pork and beef for your family.   Pork sausage (both mild and hot), ribs, pork chops, shoulder and ham steaks, ground pork, and roasts are available.   Sausage is sold in 1-pound rolls, with the other items being vacuum-packaged for 'no-mess' convenience.    If you like old-fashioned country hams, Uncle Mike can take care of you, too!   The beef is sold primarily in 'value-packs' which will be a 50 or 100 pound assortment of ground beef, steaks, and roasts.   However, we also sell beef retail cuts separately, particularly ground beef.

Do you know if the pork or beef you buy is enhanced?   The majority of the pork and beef on the market today is enhanced or 'pumped' with a 7 to 15 percent solution of water, salt, sodium phosphates, sodium lactate, potassium lactate, sodium diacetate, and varying flavor agents to bolster flavor and juiciness.   While enhanced pork and beef may be juicer and more tender, unenhanced pork and beef has more flavor and can be just as juicy and tender if not overcooked.   The Jones family does not enhance their pork or beef.   Red Hill Farms pork and beef is 'natural' with no artificial ingredients or added color and is minimally processed.

Red Hill Farms was a new vendor at the SKY Farmers Market in Bowling Green, Kentucky for 2010.   The SKY Farmers market is located at the Medical Center parking lot near 5th and High Streets.   Red Hill Farms will be at the SKY Farmers Market on Saturdays from 7-12 Noon from April thru October.
